Great cheeses come from great milk. Hollis Mead’s cows are 100% pasture fed meaning they produce roughly a quarter of the yield of an industrial dairy, maintaining a production much closer to their natural state. The result, cows that live longer and a melt in the mouth cheese that is completely unique in this country.
Made entirely on the farm by hand in small batches, Marvel is brand new on a thriving British cheese scene and Hollis Mead a new heavy weight contender.
It’s a washed rind which means daily bathing in brine making the rind gossamer thin and the inside golden-gooey with tantalising nutty notes.
You can’t buy it in supermarkets – or even yet in specialist cheese shops. It’s a grab it while you still can kind of cheese.
