Chesil Smokery now employ Paul and Keith, previously of Davy’s Locker, to develop and run a fresh fish department within Chesil Smokery.
The fresh/wet fish business is full of nuances and complications – especially when it comes to ‘the numbers’. After all, not all fish from the same species are of the same size
Selling online adds further various layers of complications (fixed pack sizes/guaranteed minimum weights etc).
While we navigate this minefield, we believe it better for you to order your fish on the phone – 01308 456306 – from our specialist team. They will, in effect, for most of the wild species, sell you the whole fish. You can either receive the fish whole, filleting it yourself, or our guys can fillet it for you at no extra charge.
Let us know if you want the skin and bones as well, to make stock.
Some fish will yield a higher % of boneless fillets than others, and each fish page will explain that.
Payment will be taken over the phone and the fresh fish sent out in our special chill packs the same – or next – day.
This way provides a really personal service, ensuring you get what you want – no nasty surprises.
We will base our prices on the market – which can change daily, depending on time of year and sea conditions. In a nutshell, stormy conditions in February will result in rather higher prices than a calmer May Thursday. Other factors include how many boats are landing that day, etc. It’s a classic market.
If you are interested in a fish that is not on our online list – i.e. halibut – please ask as we can usually source it for you, fresh as a daisy.
NB because our fresh fish team start horribly early in the morning, they tend to ‘knock off’ at 1pm. However, you can place orders up ‘til 4 pm with our support team to be fulfilled the following day.
